Cheddar & Scallion Pull-Apart Rolls
These Cheddar and Scallion Pull- Apart Rolls are everything you need and more. They’re so cheesy, buttery, airy, and most importantly, so easy to make! Making your own bread or buns can seem daunting, but I promise you, this recipe is so simple and foolproof. These rolls are perfect to make for a spring brunch or dinner to share as a side or appetizer with friends or family. Perhaps for an upcoming Mother’s Day get together or small dinner party to celebrate everyone being vaccinated!
So, when I initially started conceiving this recipe, I had envisioned it and planned it out very differently than what I ended up actually creating. I had intended for these to be more of a Parker House style roll, and also made with chives. But, the grocery store didn’t have chives, and when I tested the recipe, a swirl roll just worked better. And I must say, the end result was all the better for it. These buns are SO good. Soft and cheesy layers punctuated with slightly peppery bites from the scallions. Heavenly.
The milk and butter in the dough make the bread so soft and moist. Combine that with the melty cheddar cheese and oooooooh man. They are absolutely delicious.
I won’t be evangelistic about it, but I would recommend trying to find and use milk, butter, and cheese that come from grass-fed/finished and pasture-raised cows, if it’s accessible to you. Dairy that comes from grass-fed and pasture-raised cows is beneficial in a number of ways, as it offers much more nutritious value than dairy produced from today’s standard industrial agriculture practices. Plus, grass-fed farming is typically better for the environment as well. A win-win if you ask me!
But! Bringing it back to the buns. Not only are they great for a brunch side, but they go perfectly served with a tasty bowl of soup or chili (yes, there’s still time for chili). Dip these warm, cheesy rolls into a steaming bowl of chili on brisk, rainy spring day...mmmmMmmm. Your soul will thank you for it.

Cheddar and Scallion Pull-Apart Rolls
Prep time: 15 minutes
Cook time: 25-30 minutes
Total time: 2 hours 30 minutes
Serves: 9 - 12 rolls
Ingredients
1 ¼ cup all-purpose flour
2 cup bread flour + ¼ cup
1 packet instant dry yeast
1 ½ tsp salt
1 cup warm whole milk
1 egg, room temperature
3 ½ tbsp butter, room temperature
3 tbsp sugar
For the filling:
2 cups shredded extra sharp cheddar
4 scallions, thinly chopped
4 tbsp butter, softened
Instructions
Prep a 9-inch round baking pan or dish with parchment paper. Set aside.
In the bowl of a stand mixer, add the flours, yeast, and salt. Whisk together until well combined.
Add the milk, egg, butter, and sugar. Using the dough hook, mix together until fully combined and flour is completely integrated into the dough. Should take around 3-4 minutes. If the dough is too sticky add the additional ¼ cup of flour, 1 tbsp at a time.
Shape the dough into a ball, place it back in the bowl, cover it with plastic wrap and let rise for an hour to 90 minutes. Or until near double in size. Meanwhile, mix the scallions with the butter.
Lightly dust your counter or workstation with flour. Punch the dough down, turn it onto the work surface, and roll it out into a large rectangle. Around 16in X 12 in. Spread the scallion butter mixture evenly across the entire rectangle. Then sprinkle the cheese on top. Using a pizza wheel, slice 9 equal sized strips. You could also do 12 slightly smaller strips if you’re using a 9 X 13in dish.
Roll each strip up pretty tightly into a swirl, and place in the prepared baking dish. The 9 rolls should fit snugly, with 1 in the middle and the rest surround it. Place plastic wrap or a warm towel over the rolls and let rise for an additional 30 minutes. During this time, preheat the oven to 350°F.
Bake the rolls for 25-30 minutes, or until the cheese that’s bubbling out is a light golden brown. Serve while warm and enjoy!
