Fluffy Turmeric Chocolate Chunk Cookies

Fluffy Turmeric Chocolate Chunk Cookies

Spicing up your Tuesday with these Fluffy Turmeric Chocolate Chunk Cookies! Name a better treat to get you through the week than a warm, chocolatey cookie. You can’t. These are so incredibly fluffy and delicious. Almost like a golden latte in cookie form. The turmeric adds a fun and tasty twist on your classic chocolate chip cookies; I’m telling you, you’ll love them!

Why turmeric? Well, this aromatic spice has such a unique slightly sweet, slightly gingery flavor that I absolutely love. And also, I’m obsessed with its vibrant color. I mean, look how yellow and golden these turned out! Not only is it beautiful and delicious, but it also has so many health benefits. To name a few, it is said to have both strong anti-inflammatory and antioxidant properties, and some research indicates improved brain function. All in all, not a bad addition to a batch of cookies.

Made using coconut sugar, these cookies are also free of refined sugar. You could also swap in gluten free flour if it suits your fancy. While they’re still cookies, and still a treat, they do have some healthy-ish elements to them.

The warm, earthy tones of the turmeric pair perfectly with the richness of the dark chocolate and the sweetness from the coconut sugar to make an incredible flavor profile in these cookies. It’s not your typical flavor pairing for a dessert, but it really is delicious. You won’t be able to stop eating them. I speak from experience.

Not only are these chocolate chunk cookies mouthwateringly good, but they’re also super easy to whip up. Mix the dry ingredients together, beat the wet together, and then combine and voila! Bake them for a mere 10 minutes and you have yourself a fresh batch of cookies. I highly recommend eating them while they’re still warm and a little gooey in the center, when the chocolate is still melty and messy. Pour you and a friend or family member some glasses of cold milk and share a plate of these delights!

Fluffy Turmeric Chocolate Chunk Cookies

Prep time: 15 minutes

Cook time: 10 minutes

Total time: 25 minutes

Serves: 24 cookies

Ingredients

  • 2 cups all-purpose flour

  • 1 tsp salt

  • 1 tbsp turmeric

  • 2 tsp baking powder

  • 1 cup butter (2 sticks) room temperature (grass-fed if possible)

  • 1 cup coconut sugar

  • 2 eggs, room temperature

  • 1 tsp vanilla

  • ¾ cup dark chocolate chunks (or more if you prefer!)

Instructions

  1. Preheat the oven to 350°F and prep a baking sheet with parchment paper.

  2. In a large bowl, add the flour, salt, baking powder, and turmeric. Whisk together until combined.

  3. In a large mixing bowl, cream together the butter and sugar until well combined and almost fluffy. Next, add the eggs and vanilla. Beat on medium until mixed.

  4. Slowly add the dry ingredients to the wet and beat on low until completely combined and dough has formed. With a spatula, stir in the chocolate chunks so they are evenly dispersed.

  5. If the dough is too sticky to handle, place in the fridge to chill for 5-10 minutes.

  6. Using a cookie scoop or spoon, scoop out and roll out about ~1 inch sized balls of dough and place them on the cookie sheet 2 inches apart. You may need to do more than one round of this.

  7. Bake in the oven for 9-10 minutes, or until the edges are just turning a golden brown. They should still be soft in the middle when you take them out, as they’ll continue cooking a little on the pan. And we all love a soft, gooey center!

  8. Let cool on the pan for a couple minutes before transferring to a cooling rack. Enjoy while still warm and melty, or store in an airtight container for up to a week!
