Sriracha Turkey Bacon, Egg, and Cheese Breakfast Sandwich
Starting the day off right with this Sriracha Turkey Bacon, Egg, and Cheese Breakfast Sandwich! This sandwich is loaded with all of the goods to keep you satisfied for hours. Not to mention, it’s absolutely delicious. And I mean, who doesn’t love a good breakfast sandwich? They just really hit the spot sometimes, ya know?
The inspiration…
At our old apartment, there was a little cafe and bakery across the street that had THE best sriracha egg and cheese breakfast sandwiches. Perfectly toasted brioche bun, fluffy eggs, melty cheese. They slapped. Since moving down to Brooklyn, the 2 minute walk across the street changed to an hour subway ride, and, sadly, making the trek back to the UES for a breakfast sandwich just isn’t practical on most days. So, I decided to try to recreate it...and put my own healthy twist on it, of course.
A toasted whole wheat english muffin is used in the place of the brioche bun, just to add some more fiber and healthy grains. I also incorporated some avocado for some healthy, satiating fats, a little tomato, and some turkey bacon for a little extra protein and crisp. Topped with cheddar cheese (from grass-fed cows, ideally!) and sriracha mayo, everything comes together to create the yummiest breakfast sandwich! Trust me, the whole family is going to love this one.
The real key to the sandwich, besides the sriracha mayo, is the eggs. They need to be cooked juuust right to get them perfectly light and fluffy. The trick is to cook them slowly on low heat, so they are almost soft scrambled. Gently fold the egg on top of itself just before it’s completely cooked and set to get those soft and fluffy texture. It’s a breakfast sandwich game changer, I’m telling you. Whip these up for a quick and easy breakfast, or you could even prep them beforehand and microwave them for those ultra-busy weekday mornings!

Sriracha Turkey Bacon, Egg, and Cheese Breakfast Sandwich
Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Serves: 2 sandwiches
Ingredients
4 pieces turkey bacon (try to opt for uncured/nitrate free if you can)
4 eggs
Avocado or olive oil spray
3 tsp avocado mayo (I like Primal Kitchen)
4 tsp sriracha
2 whole wheat english muffins, halved
2 slices of tomato
½ avocado, sliced
2 slices cheddar cheese
Instructions
Prep two skillets or pans with the avocado spray. Heat one over medium-high heat and heat one over low heat.
Place the turkey bacon in the skillet over medium-high heat and cook about 3 minutes on each side, or until ideal crispiness. Once done, remove from skillet and set aside.
Scramble two eggs together and pour them into the skillet over low heat. Rotate the pan around so the eggs cover the entire bottom, making for a large, thin layer. Let the eggs cook until the edges firm up and the middle begins to set. May take a few minutes.
In the meantime, pop your english muffins in the toaster and toast on medium, just until beginning to brown. Additionally, add the mayo and sriracha in a small bowl and mix together until smooth and well combined.
Once the egg has mostly set, fold the egg on top of itself lengthwise about a quarter section at a time. Should resemble a folded crepe rectangle. Then fold a quarter at a time again, this time to result in a square shape. Remove from skillet and repeat with other two eggs.
For assembly: cut the turkey bacon in half horizontally and place on bottom half of toasted english muffin. Next add the slice of tomato, egg, cheese, and then avocado. On the top half of the muffin, cover with the sriracha mayo. Place on top and enjoy!
