Healthy(ish) S'mores Bars
Anyone else feel like Memorial Day Weekend officially marks the start of s’mores season? Growing up, I feel like that’s when we would always start going camping...which obviously meant roasting shmallows over the campfire for s’mores. And while all of us might not be able to get out camping and s’mores roasting at the start of this summer season, we CAN make these incredibly tasty s’mores bars right at home in our kitchens!
Being stuck (safe) at home in NYC, there’s not a lot of opportunity to gather around a bonfire with sticks, so I decided to satisfy my s’mores cravings in a different way. These Healthy(ish) S’mores Bars are so rich and decadent, while still implementing some healthier ingredients. The base is made using only three ingredients--organic graham crackers, coconut oil, and maple syrup--and the brownies are Simple Mills, making them gluten free and paleo friendly. The top is just, well, marshmallow, but sometimes you just need the real deal. The layers come together to form the classic s’mores flavors we all love.
This recipe is super easy and a perfect treat for the upcoming summer evenings. And who knows, perhaps you’ll even have the opportunity to bake them for a barbecue or gathering at some point!

Ingredients
For the base:
7 full graham crackers
¼ cup coconut oil, melted and cooled
2 tbsp maple syrup
For the brownies:
1 box of Simple Mills Brownie Mix (though any mix will work)
2 eggs
½ cup coconut oil, melted and cooled
3 tbsp water
For the topping:
2 cups mini marshmallows
Instructions
Preheat the oven to 375℉ and prep an 8x8 baking dish with nonstick spray. Set aside.
Chop up the graham crackers in a food processor until they are mostly crumbs with some small chunks left.
In a mixing bowl, combine the crushed graham crackers, ¼ cup coconut oil, and maple syrup. Stir until the graham cracker is completely coated and it begins to form a crumbly texture. Pour it into the prepped baking dish and firmly press it down to create an even base layer. Pop in the refrigerator to cool for 15-20 minutes.
In the meantime, (following the instructions on the brownie box) add the oil, eggs and water in a large mixing bowl, and whisk them together until well mixed. Next, add the brownie mix and stir until combined. Pour on top of the chilled graham cracker base.
Bake in the oven for 25-35 minutes (depends on your oven). The brownie should be mostly cooked and there should be no jiggle in the middle (a toothpick should come out mostly clean).
Once the brownie is mostly cooked, pull the dish out and add the marshmallows on top so they’re an even layer. Place the dish back in the oven on broil for 4-5 minutes, keeping a close eye on the marshmallows so that they don’t burn.
Remove and let cool for 10 minutes before serving. Feel free to sprinkle any leftover graham crumbs on top! Enjoy :)
