Paleo Chocolate Chip Banana Bars
It’s day 42 of isolating at home and the number of banana bread loaves made around the world is rising by the hour. With mass amounts of bread being made, I thought, perhaps I’d mix things up and put my mushy bananas to use in a slightly different way. So here we are with the Paleo Chocolate Chip Banana Bar recipe that I threw together!
If you’re looking for a little variety from your typical banana bread, these healthy and delicious bars are here for you. Cassava and almond flour make it paleo friendly and grain free, and the bars are sweetened using only maple syrup and the sweetness from the bananas and chocolate chips. The ingredients are simple and super easy to mix together and pop in the oven for a yummy afternoon snack or quick grab-and-go breakfast for your commute from the kitchen to the couch. Think blondies or cookie bars, but healthy...and banana flavored. They’re fantastic.

Ingredients
3 very ripe bananas
1 teaspoon vanilla extract
¼ cup maple syrup
2 eggs
1 cup cassava flour
½ cup almond flour
½ teaspoon baking soda
½ teaspoon baking powder
1 tsp cinnamon
½ cup dark chocolate or semi sweet chips (I prefer to use ones without emulsifiers added such as EnjoyLife brand)
Instructions
Preheat the oven to 350℉ and prep an 8x8 baking dish with nonstick spray. Set aside.
In a large bowl, mash the bananas and whisk together with the vanilla, maple syrup, and eggs until combined.
In a separate bowl, mix together the cassava flour, almond flour, baking soda and powder, and cinnamon. Then add the mixed dry ingredients into the large bowl with the wet ingredients and combine until thoroughly mixed.
Once combined, add in the chocolate chips (be sure to reserve some for later) and stir until evenly distributed.
Pour the batter into the prepared baking dish and make sure it is even. Sprinkle the remaining chocolate chips on top.
Bake for 45-55 minutes or until the top is a nice golden brown and a toothpick comes out clean.
