Grilled Halloumi and Veggie Sandwich
Sometimes all you need is a sandwich...a Grilled Halloumi and Veggie Sandwich to be exact. There’s something so idyllic about a fresh, veggie-filled sandwich for the spring months. Pack it up for a picnic in the park, or serve it at home with an easy and tasty lunch. Cucumber, carrots, halloumi, tomato, and sprouts sandwiched between two pieces of hummus coated sourdough bread. Light, satisfying, delicious, and so incredibly easy to put together. This sandwich is going to become a staple in your lunchtime repertoire.
If you’ve never had halloumi, well, now is the time! It’s a semi-hard cheese that’s made from goat’s or sheep's milk, it traditionally comes from Cyprus, and it is so dang good. One of the unique aspects of it is its high melting temperature, which is why it’s perfect for grilling or pan frying to really bring out its flavor. A little salty, a little tangy, and a little melty, it’s the best addition to any sandwich.
Sprouts are so extremely nutrient rich and a good source of fiber too, and I just love the texture they add. So they were definitely a must when creating this recipe. The cucumber and carrots add a nice crunch to the sandwich too, which we love.
The hummus adds some extra protein as well as a lovely creamy texture that pulls everything together. Spread it over some fresh sourdough bread, or honestly any bread you prefer, and you have yourself one tasty sandwich! You could even toast the bread to add a little extra crisp.

Grilled Halloumi and Veggie Sandwich
Prep time: 10 minutes
Cook time: 6 minutes
Total time: 16 minutes
Serves: 1 sandwich
Ingredients
2 pieces of sourdough toast
¼ cup hummus
Smoked paprika
1 small cucumber, halved and then sliced vertically
¼ cup shredded carrots
2 oz halloumi, sliced
Oil spray for cooking (I use avocado oil)
4 slices of tomato
⅓ cup sprouts
Instructions
Spread the hummus on the two slices of bread and sprinkle some smoked paprika on one side (amount is to taste). Add the cucumber to one piece of bread, then the carrots.
Heat a grill pan or skillet over medium-high heat and spray it with avocado oil spray. Once hot, add the halloumi slices and cook until softened and browned. About 2-3 minutes per side. Add the halloumi on top of the carrots on the one slice of bread.
Top the halloumi with the tomato and sprouts, and then sandwich the other slice of bread on top. Cut in half if desired and enjoy!
