Six-Ingredient Peanut Butter Pumpkin Truffles
If you’re in need of an easy holiday treat to bring to parties or prep for guests, this recipe is for you. It’s made with only six simple, wholesome ingredients and is sooo easy to make. These healthy truffles have no flour, minimal added sugar, dairy-free and are vegan-friendly.
December is usually deemed the most wonderful time of the year (and rightfully so!) but it can certainly get a bit hectic with all the events, shopping, cooking, decorating, and traveling. This easy, no-bake recipe is perfect for those of us with a crazy holiday schedule.

Ingredients
½ cup pumpkin puree
½ cup peanut butter (any nut butter will work)
1 tbsp maple syrup
½ tsp cinnamon
1 ½ dark chocolate chunks (I like Enjoy Life or Hu Kitchen as they don’t have emulsifiers)
2 tbsp unsalted peanuts, chopped
Instructions
In a large bowl, mix together pumpkin, peanut butter, maple syrup, and cinnamon until thoroughly combined. Chill in the fridge for 30-45 minutes or until mixture is firm enough to roll into balls.
Roll into approximately 1 inch round balls and stick in the freezer for about 15-20 minutes to firm for dipping.
While the balls are in the freezer, put your chocolate in a microwave safe bowl and melt it by microwaving in 30 second intervals, stirring the chocolate after every 30 seconds until completely melted. Prepare a sheet pan or plate with wax or parchment paper.
Using a spoon or fork, roll the peanut butter pumpkin balls in the melted dark chocolate until it’s fully covered and then place on the prepared sheet or plate.
Store in the fridge or freezer.
