Paleo Fig Newtons
Anyone else love Fig Newtons growing up? I know I was a BIG fan of them. My mom used to pack them in our school lunches and they were such a treat. I’ve been craving some recently, and unfortunately, they don’t have the greatest of ingredients (ie. high fructose corn syrup), so I figured I’d try to make my own!
These taste just like the original packaged delights that we all know; in fact, they’re so good, you would never be able to tell that they’re paleo and made using only wholesome and healthy ingredients such as almond flour, dried figs, avocado oil, and honey. They’re free of dairy and refined sugars and so easy to make.
You only need about 30-45 minutes to whip these up, and they’re perfect to have on hand for quick snacks for the week. This recipe is a good one, seriously.

Ingredients
1 cup dried figs, quartered and no stems
1 ½ c almond flour
½ tsp baking powder
¼ tsp salt
1 egg
1 tsp vanilla
2 tbsp coconut sugar
2 tbsp avocado oil (refined coconut oil would work too)
1 tbsp honey
Instructions
Preheat the oven to 350℉ and prep a baking sheet with nonstick spray or parchment paper. (I use silicone baking mats and they are truly life changing).
Soak figs in warm water for 10 minutes to soften.
Meanwhile, in a large bowl, combine almond flour, baking powder, and salt until well mixed.
In a separate large bowl, whisk together the egg, sugar, vanilla, and avocado oil until well combined. Stir wet ingredients into the large bowl with the dry ingredients until a dough is formed.
Roll dough out into a rectangle, aiming to get the dough to be about 1/8th inch thick. *I would suggest putting some extra almond flour down or rolling it between wax paper to prevent sticking of the dough.
Using a slotted spoon, remove the figs from the water and place them in a food processor. Additionally, add the honey and 1 tbsp of the soaking water. Blend until it’s a smooth, spreadable paste.
Spread the fig paste on one half of the rolled out dough, about 1 inch in width. Then fold the other half of the dough on top and seal by gentle pressing. Cut neat lines close to the filled rectangle of the sealed filling and remove any extra dough, then cut the long rectangle into squares (if you have extra dough and filling, repeat the steps for the rolling and filling until it’s all used up).
Place the squares on the prepared baking sheet and bake for 15-17 minutes or until firm and slightly golden brown.
Remove from the oven and allow it to cool for 5 minutes, then enjoy!
