Healthy Veggie Egg White Bake with Turkey Bacon and Feta
I’m going to be honest, 93% of the reason I made this recipe was because I was sick of spending 40 days and 40 nights scrubbing my muffin tin clean after making egg muffins. If anyone else knows the torture of laboriously trying to clean a muffin tin, this recipe is for you.
Meal prepped eggs can be a real lifesaver during the week, which is why I had been doing egg cups, but this egg bake is just as easy and convenient without the soul-sucking job of cleaning the muffin tin at the end. It’s a game changer. Truly. This healthy egg white bake is so delicious, filled with veggies, high in protein, and low in carbs and fats. It’s perfect as a post-workout meal on the go! I’ve been bringing it with me on my class days to eat after the gym, and it works out perfectly.

Ingredients
1 tsp olive oil
½ yellow onion, diced
1 tbsp minced garlic
6 pieces of nitrate free turkey bacon
1 cup white button mushrooms, sliced
2-3 large handfuls of baby kale
1 tsp oregano
½ tsp garlic powder
Salt & Pepper
16oz carton of egg whites (about 10 eggs)
½ cup fat free feta
Instructions
Preheat the oven to 400℉ and prepare a baking sheet with aluminum foil and/or nonstick spray, as well as a 8x8 baking dish with nonstick spray and set aside.
Heat oil in a skillet over medium-high heat on the stove. Saute the onion, mushrooms, and garlic until the onion and mushrooms are softened. Onion should be translucent. While those are cooking, place the turkey bacon on the prepared baking sheet so that they are not touching and bake for 8-10 minutes.
Once the onion and mushrooms are cooked, add the the baby kale and cook down until wilted. Transfer cooked veggies into a large mixing bowl.
Remove the turkey bacon from the oven, cut into squares, and add to the bowl of veggies. Add the oregano, garlic powder, and salt & pepper, and mix everything together.
Pour the egg whites into the prepped baking dish, and then evenly distribute the veggies and turkey bacon into the egg whites so that they are visible from the top.
Sprinkle the feta on top and then bake for 40-50 minutes or until the middle is set (shouldn’t jiggle!).
Cut into 4 - 6 pieces, serve immediately or pack it up as meal prep. Top with some smoked paprika or hot sauce and enjoy!
