These are truly The Easiest 3-Ingredient PB & J Bars ever! I’m all for an elaborate baking day, but sometimes you just want a treat that takes no time to throw together. And this recipe certainly fits that bill. Made using only peanut butter, jelly, and eggs…it’s hard to get any simpler than that.

Easy 3-Ingredient PB & J Bars

I’ve had peanut butter cookies made using PB, sugar, and eggs, but I wanted to create a fun twist on that recipe. Peanut butter and jelly is such a classic combo, and the flavors really come through in these bars. The jelly is used in the place of sugar, so the only sweetness of this recipe comes from the jelly. You can really use any kind of jelly you prefer, but I feel like strawberry jelly is what I think of when I think of PB & J. 

Easiest Healthy PB and J Bars

These bars are so insanely gooey and chewy, I can’t even explain it. I love that they’re not overly sweet, and that the strawberry flavor is mixed in throughout the peanut butter to give a perfectly balanced combination of the two. 

PB and J Bar Recipe

In addition to only needing three ingredients, this is also a one bowl recipe. It only takes a few minutes to mix together, pour it into a baking dish, and toss in the oven. And I feel like everyone is very likely to have a jar of peanut butter, jelly, and a couple eggs sitting around. It’s just such a convenient recipe!

So if you’re a fan of PB and J, as well as absurdly simple desserts, then these bars are definitely for you. They’re really so delicious and have almost a fudgy consistency that’s just so dang good.

PB & J Bars


The Easiest 3-Ingredient PB & J Bars (Grain Free)

Prep time: 5 minutes
Cook time: 30-35 minutes
Total time: 40 minutes 
Serves: 16

Ingredients

  • 1 jar (16oz) unsweetened peanut butter

  • 1 cup + 2 tbsp to ¼ cup strawberry jelly (I used reduced sugar jelly)

  • 2 eggs 

Instructions

  1. Preheat the oven to 350°F and prep an 8x8 baking dish with parchment paper or non-stick spray.

  2. In a large bowl, add the peanut butter and 1 cup of jelly. Mix together until well combined.

  3. Add in the eggs and continue stirring until well mixed. 

  4. Pour the batter into the prepared baking dish. 

  5. Swirl in the remaining jelly on top (anywhere from 2 tbsp to ¼ cup depending on your preference). 

  6. Bake for 30 - 35 minutes or until the middle is set and firm to the touch. Let cool for 15 minutes before cutting and serving.
