Healthy Date & Walnut Bread
Anyone else passing this time spent at home by baking up a storm? I know I certainly have an ever growing list of new recipes I want to try to make while we’re stuck (safe) in the apartment. I figured I’d share this delicious Date and Walnut Bread recipe, just in case any of you are doing the same and looking to add some new recipes to your list!
This date and walnut bread is so easy to make, and it’s a perfect morning treat for breakfast or an afternoon snack while working from home. This recipe is made using no refined sugar and is sweetened only with honey and dates. It’s also made using only wholesome and nutritious ingredients such as whole wheat flour, nonfat greek yogurt, pasture-raised butter, and walnuts. Many of these ingredients are excellent nonperishable stables to have on hand in your pantry during these crazy times. I’ll tell you what. I’ve never had so much flour in my pantry, personally. Might as well put it to use!

Cook time: 1 hour 10 minutes

Serves: 12
Ingredients
1 ½ cup dates, pitted and chopped
1 cup boiling water
1 tsp baking soda
2 cups whole wheat flour
1 tsp baking powder
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
2 eggs
¼ cup pasture-raised butter, melted and cooled
1 tsp vanilla
⅓ cup honey
½ cup nonfat greek yogurt
1 cup chopped walnuts
Instructions
Preheat the oven to 350℉ and prep a loaf pan with nonstick spray and lightly coat the bottom and sides of the pan with flour.
Bring the water to a boil and then add the baking soda and combine mixture with dates in a small baking bowl. Allow the dates to soak for 5-10 minutes.
In the meantime, whisk together the dry ingredients (flour, spices, baking powder) in a large mixing bowl until well mixed and set aside.
Mix together the wet ingredients (eggs, butter, yogurt, vanilla, honey) in a separate large bowl and combine thoroughly.
Gently stir wet ingredients into dry ingredients. When mostly mixed, pour in dates with the water and stir/fold together until evenly mixed.
Gently fold in walnuts (save a few for the top).
Pour batter into prepped pan and sprinkle remaining walnuts on top.
Bake for 1 hour and 10/15 minutes or until the top is golden brown and a toothpick or knife comes out clean.
