Peanut Butter Swirl Black Bean Brownies

Peanut butter and chocolate is truly one of (if not the) best combos in the world. Seriously, put those two together and you can do no wrong in my eyes. So to honor my love for this combo, I put together this delicious peanut butter swirl brownie recipe, made out of….you guessed it, black beans! While I could sit down and put back an entire pan of Ghrirardelli mix brownies like the best of them, I like to try to find ways to enjoy my favorite treats in slightly more nutritious ways as well. Black beans are high in fiber and a great source of plant based protein, and I’m not claiming that these are straight up protein brownies here, but it adds a little somethin’ somethin’ compared to your standard brownie.

These black bean brownies are rich, indulgent and yet, not tooooo sweet or overwhelming. I’ve been enjoying them as after dinner treats recently, and let me tell you, they really hit the spot.

Peanut butter swirl black bean brownie

Prep Time: 15 minutes

Cook Time: 35-40 minutes

Total Time: 50-55 minutes

Serves: 12


Ingredients

1 (15oz) can of black beans, drained

½ avocado 

2 tsp avocado oil 

⅓ cup coconut sugar (or maple syrup)

2 eggs

⅓ cup unsweetened cocoa powder

⅓ cup tapioca flour 

½ tsp baking powder

½ tsp baking soda

⅓ cup peanut butter chips

2 tbsp runny peanut butter


Instructions

  1. Preheat the oven to 350℉ and prep a 9x9 baking pan with either parchment paper or nonstick spray. 

  2. In a blender or food processor, mix together the black beans, avocado, oil, coconut sugar, and eggs until well combined. 

  3. In a large mixing bowl, whisk together the cocoa powder, tapioca flour, baking powder, and baking soda.

  4. Pour the blended wet ingredients into the mixing bowl with the dry ingredients and stir until completely combined. 

  5. Stir in the peanut butter chips. 

  6. Pour batter into prepared pan and spread evenly. 

  7. With a knife, drizzle the runny peanut butter in lines across the batter. Feel free to swirl in however you like, or if you want to be fancy, use the knife to lightly pull down on the peanut butter lines perpendicularly, almost like you were going to make a checkerboard pattern. 

  8. Bake for 35-40 minutes, or until a toothpick comes out clean. 

  9. Set aside to cool for 15 minutes, then cut into squares and serve!
