Healthy Peanut Butter Chocolate Chunk Granola

I’ll be the first to admit I’m a bit of a granola fiend. I can’t eat yogurt without it (it’s a texture thing), and I’ve grown to really love the extra crunch of it in my smoothies/smoothie bowls. I’m always on the hunt for a super quality granola with wholesome, minimally processed ingredients. And damn, it’s surprisingly hard to find at a decent price. So I gave it a whirl and made my own!

Healthy Granola Recipe

This crunchy granola recipe is so delicious and uses healthy, whole ingredients such as rolled oats, chia seeds, peanuts, maple syrup, peanut butter and dark chocolate. It’s vegan friendly and so easy to make. Dairy free, oil free, and high in fiber and protein, this tasty granola is perfect to toss on top of your yogurt in the morning, packed as an easy snack to munch on later, or to have in place of cereal with a bowl of milk.

Healthy Granola Recipe

Prep time: 10 minutes

Cook time: 30-40 minutes

Total time: 40 minutes

Serves: 6-8 people

Ingredients

  • ½ cup creamy unsalted peanut butter (the runnier the better)

  • ¼ cup maple syrup

  • 2 tbsp vanilla extract 

  • 3 cups rolled oats 

  • ¼ cup chia seeds

  • ⅓ cup chopped unsalted peanuts 

  • 1 tsp cinnamon 

  • Dash of sea salt

  • ½ cup dark chocolate chunks or chips (I like Enjoy Life or Hu Kitchen) 

Instructions

  1. Preheat the oven to 300℉ and line an edged baking sheet with parchment paper and spray with nonstick spray. Set aside.

  2. In a large mixing bowl, whisk together the peanut butter, maple syrup, and vanilla until well combined. Microwave mixture in a microwave safe container for about 20-30 seconds if you need to make it a little runnier to mix. 

  3. Add in the oats, chia seeds, peanuts, and cinnamon. Mix with a spatula or wooden spoon until everything is evenly coated with peanut butter mixture. Pour the coated mixture onto the prepared baking sheet and make sure it is evenly dispersed. 

  4. Bake in the oven for 30-40 minutes (or until oats are golden brown and crispy), rotating the pan and mixing the granola a bit at the 15 minute mark. 

  5. Remove from the oven and immediately mix in the chocolate chunks into the granola while it’s still warm and on the tray. Let cool completely before storing in an airtight container or bag. *Tip: Store in the freezer to keep it extra crunchy and to last longer!
