Chocolate Chia Pudding Parfait (Vegan + Paleo)
I must confess, this recipe is not one of my own creation. It comes from my dad; however, it’s too good not to share! It’s packed with healthy fats from the chia seeds and just slightly sweetened using monk fruit. This recipe is SO simple and easy to make ahead for a quick snack to grab as an afternoon pick-me-up or as a perfect little dessert to end the day.
Puddings (or anything of that consistency) are usually a big no for me….I have a bit of a texture complex when it comes to viscous foods. I can’t explain it. But this one actually gets my stamp of approval. The chia seeds already add some extra texture, but mix in some additional toppings and voila!
This recipe is totally vegan and paleo friendly, using almond milk for the liquid and topped with coconut yogurt. I opted to top mine with raspberries, chopped macadamia nuts, and a sprinkle of shaved dark chocolate, but you can really use any toppings you prefer.

Serves: 4-5
Ingredients
2 cups unsweetened almond milk (or any dairy-free milk you prefer)
½ cup chia seeds
2 tbsp dark unsweetened cocoa powder
2 tsp vanilla extract
4 tbsp monk fruit sweetener
For topping:
Unsweetened coconut yogurt (plain or vanilla) + ½ tsp monk fruit
Raspberries
Chopped macadamia nuts
Shaved dark chocolate
Instructions
Combine the almond milk, chia seeds, cocoa powder, vanilla, and monk fruit sweetener in a small pot. Whisk or stir together.
Bring to a low boil over medium heat.
Simmer for 5 to 10 minutes until chia seeds partially dissolve and form a thick pudding like consistency. Stirring every so often.
Separate into approximately 5 x ½ cup servings and refrigerate.
After pudding has cooled, prepare yogurt with a small amount of monk fruit (~1/2 tsp) and thoroughly mix
Cover pudding with yogurt mix and top with your choice of toppings.
