Asparagus and Whipped Feta Crostini...the spring time appetizer you need in your life! Crisp, toasted baguette slices topped with creamy whipped feta and grilled asparagus. Sooo good. They’ll be flying off the plate. Light, seasonal, and tasty, these crostini are the perfect way to kick things off at a rooftop or backyard dinner party. I would also say they would work for a lovely elevated afternoon snack as well!
The whipped feta is the shining star of this dish. Blended with greek yogurt, olive oil, and lemon juice, it’s creamy, tangy, and sweetened just a touch with a little bit of honey. I would recommend a generous spread on each crostini.
Grill the asparagus up on the stove or outside over some coals (grilling season is upon us!). It gets so tender and easy to bite through, which is ideal for a crostini, and their flavor is really enhanced by the whipped feta.
Toasted French baguette slices make the perfect crostini base. You could also grill the slices up along side the asparagus, or just toss them in the toaster oven and they will crisp up nicely. It all comes together so well, and the best part? They are SO easy to whip up. They might look and taste fancy, but they take almost no time at all. They really do make for the best little bite!

Asparagus and Whipped Feta Crostini
Prep time: 10 minutes
Cook time: 10 minutes
Total time: 20 minutes
Serves: ~20 crostinis
Ingredients
1 bunch of asparagus, trimmed and rinsed
Olive oil or avocado oil spray for grilling (if on grill pan)
1 french baguette, sliced diagonally into ~½ - ¾ inch pieces
8oz feta
⅓ cup plain greek yogurt
¼ cup olive oil
Juice of 1 lemon
1 tbsp honey
Fresh thyme for topping
Instructions
Heat a grill pan over medium-high heat and spray with avocado or olive oil spray. Place the asparagus on the grill pan and cook until softened and tender (about 7 minutes), rotating the pieces occasionally. Once done, remove from the pan and cut into thirds.
Meanwhile, place the slices of baguette in the toaster oven for 10 minutes at 375°F. Should be toasted to a deep golden brown around the edges.
Place the feta, greek yogurt, lemon, and honey into a high power blender or food processor and blend together until well combined and smooth.
Generously spread the feta mixture over each crostini slice and then top with asparagus and a sprinkle of thyme. Serve immediately and enjoy!
